Chocolate Silk Cupcakes

If you frequently dream of indulging in a heavenly, silky chocolate cupcake then look no further…if there is one type of cake that I am extremely fussy with, it is chocolate cake. I have tasted so many chocolate cakes in my life at various parties, food markets and even from some supermarkets (which I shall not name and shame!), and I have been left feeling nauseous and heavy after eating or tasting them. Some people think that chocolate cupcakes are one of the easiest cakes to make. Well, in my opinion, this is not true and it takes a lot of time and effort to find the right formula. This particular recipe is one that I will treasure forever as in the words of my son, “they are the best chocolate cupcakes I have ever tasted in the world”. He is my number one critic and if something does not taste good he will let me know right away.

I have named these cupcakes chocolate silk because that is exactly how they taste and look. The buttercream is as silky and glossy as you can imagine and I will certainly be making these for the next party that comes along.

 

Ingredients

To make the sponge:

2 1/2 cups plain flour

1/2 cup cocoa

1 tsp baking soda

1/2 tsp salt

1 cup butter, softened

2 cups caster sugar

4 large eggs

1 cup sour cream

1/2 cup milk

2 tsp vanilla essence

To make the buttercream frosting:

1/2 cup butter, softened

1 cup cocoa

5 cups icing sugar

1/2 cup milk

2 tsp vanilla essence

 

Directions

  1. Preheat oven 180°C/Fan 160°C/gas 4. Line two 12 hole cupcake trays with cupcake liners.
  2. Beat sugar and butter until fluffy.
  3. Beat in eggs one at a time.
  4. Add sour cream and milk.
  5. Sift flour, baking soda and salt and slowly add to mixture.
  6. Divide mixture into the cupcake liners and bake for 20 mins.
  7. For the buttercream, sift the cocoa powder and whisk with the butter and vanilla essence until creamy and add the milk. Sift the icing sugar and add 1 cup at a time into the mixture until smooth and blended.
  8. Once cupcake sponges are cool, pipe the buttercream on top.
